Food Republic is a food court chain run by the BreadTalk Group (including Toast Box) based in Singapore. Although, they have outlets in Hong Kong as well (we tried their Olympian City location). We visited their location at Wisma Atria on Singapore’s famous Orchard Road (where we ate ice cream sandwiches with bread, and saw the smallest McDonald’s).
Food Republic’s concept combines local hawker fare with mini restaurants (some of which have exclusive seating) in an open dining concept, in a comfortable air-conditioned setting. Certain stalls are also run from standalone pushcarts. Singapore Food Republic’s elaborate decor and furniture are designed to invoke a nostalgic kampong (village) atmosphere.
A fresh fruit drink pushcart was making the rounds, so we purchased some refreshingly sweet lychee juice.
We noticed a food stall preparing Golden Dragon Beard Candy or Chinese cotton candy – a traditional Asian sweet similar to spun sugar/candy floss/fairy candy. It consists of many very fine strands of sugar, giving it the imagined appearance and consistency of a fine beard, like that of a dragon – hence its name. Wrapped around crushed peanuts, this candy has a powdery and stringy texture, making it a challenge not to get it all over ourselves! Luckily, we went outside on Orchard Road to consume this treat so we wouldn’t make a mess.
This fish ball soup included the softest, most delectable fish balls we’ve ever eaten. A slight springiness, far superior to hard and rubbery versions I’ve eaten in Vancouver. Every bite, every taste was so incredibly fresh and flavourful. Food courts in Singapore are not the quality you find elsewhere in the world – these food courts are true culinary adventures!
