Air-conditioning (a must during the island’s hot summer days and nights) is only available in these Deluxe Rooms. The hotel’s organic farm produces honey, maple syrup, and over seventy vegetables, herbs and fruit — all utilized in the hotel’s restaurant. With a “farm-to-table” ideology, the majority of the food on the restaurant’s breakfast, lunch and dinner menus is produced on Salt Spring Island. They serve grass-fed, free-range beef, free-range chicken, and their ethical seafood is Ocean Wise. They also raise their own lamb and serve their own organic free-range eggs for weekend brunch.
