DOMVS, the Italian Restaurant is located in the Sheraton Towers Singapore and is conveniently situated at lobby level, right beside The Dining Room. Open daily for lunch and dinner, this restaurant has been serving contemporary Italian cuisine since opening in 1985, and its chef has been here since its inception. DOMVS has built up a reputation of being a grande dame of Italian dining in Singapore during the past three decades. They even showcase Michelin-star chefs – most recently Igor Macchia of Italy’s famed Ristorante La Credenza.
Meaning ‘home’ in Italy’s classical language of Latin, DOMVS is a cozy, private affair with an overall ambiance that is alluringly classy yet understated. The interiors are tastefully designed by world renowned interior design firm, Hirsch Bedner Associates, with a neutral palette and black accents. Adjacent to the main dining area is the Celebrity Room, available for those who prefer even more discretion. A pair of black crystal chandeliers suspend elegantly from the ceiling, while the room’s showpiece is its long twelve seat table topped with black Nero Novalato granite.
We were hosted at DOMVS for dinner one evening during our stay at the Sheraton Towers Singapore so we could sample its Italian creations and document our experience for 9to5Travel. We had the option of allowing the chef to showcase his finest offerings through a gourmet set menu, or order à la carte. We chose the latter so that we could highlight dishes available to hotel guests and the public alike.
A delicious assortment of homemade crisp flatbreads and house baked buns accompanied by quality butter was presented at the beginning of our meal.
Caesar Salad – Romaine lettuce tossed with a creamy mayonnaise cheese sauce made with anchovies, sprinkled with garlic croutons, bacon chips, crisp parma ham and then finished with fragrant bright orange zest.
Caprese – Insalata in the style of Capri hails from the region of Campania and contains three beautiful colours of the Italian flag. Creamy white sliced fresh buffalo mozzarella cheese with green basil and leaf lettuce, vine ripened red roma tomatoes, and finished with a lightly seasoning of salt, pepper and drizzled with aged balsamic vinegar.
Grilled Seafood On Lava Stone – Seafood quartet included a grilled crayfish, salmon, and crunchy jumbo prawn on hot lava rock, and fresh scollop in the shell. This main dish was served with vegetables, including baby asparagus, spring carrots and potatoes.
Duo Grilled – Steak & lobster entree consisted of grilled medium rare US beef rib eye fillet, warm water slipper lobster and served with seasonal veggies.
Tiramisu – An indulgent dessert, this Italian “pick me up” cake was flavored with liquor and cocoa and garnished with fresh ripe raspberries, yellow flowers, white chocolate leaf and thin chocolates etched with Sheraton Towers logos.
Panna Cotta – This popular eggless Italian dessert was house-made and delicately flavoured with lemon, topped with a layer of strawberry compote, fresh berries, edible purple pansies and lime sorbet.
Service at DMOVS was extremely attentive and very personable; we truly felt as though we were “home”! Beautiful handmade truffles were graciously presented to us at the end of our dinner by our server. They were certainly a delightful way to finish off an enchanting evening.
